The O.G Protein Packed Vegan Pancakes

When I say O.G. I mean I mean these are the O.G!!! From my fitness freak phase, throughout my entire breastfeeding journey when I need a snack, to feeding the kids something that they think is delicious.

Pancakes are everyones favourite... Am I right or am I right?

But then turn them into healthy, gluten free, refined sugar free, dairy free AND naturally high in protein...it's a match made in heaven.

The whole family will love them. Eat them for brekky, an afternoon snack or on movie night. Your choice.

And another bonus, they take like 10 minutes to make.

Recipe

Serves 2 adults & 2 small children

What you'll need:

4 bananas (preferably on the riper, browner side)

4 eggs

1 tablespoon coconut flour

1 teaspoon baking powder (optional if you want fluffier pancakes, if you like them more of a crepe style then don't add baking powder or opt for less)

Ghee or coconut oil for cooking

Toppings Ideas:

Blueberries

Sliced banana

Whipped coconut cream

Cinnamon

Nut butter - we love almond

Low sugar passionfruit jam - a family FAVE

Sugar free maple syrup

What you'll do:

1. Mash the bananas in a bowl until they are completely smooth. Using a fork is fine!

2. Add a dash of water or coconut milk to the mix if its a little hard to mash

3. Crack the eggs into the bowl and mix completely in until eggs are dissolved in the mix

4. Mix in the coconut flour and baking powder in

Now you have your pancake mix.

5. Use ghee for a yummy buttery taste or coconut oil for a completely dairy free alternative, pour onto a non stick pan.

6. Pour small amounts of the pancake mix onto the pan over medium to low heat.

Cook them until they turn golden on one side before flipping. As the mixture is quite runny, the trick to flipping them is to keep them small.

7. Once you have cooked all pancakes, let them cool before adding any whipped coconut cream. Drop blueberries ontop, a sprinkle of cinamon, then top with any other toppings that you love!

If I'm feeling a little frisky I add a little bit of sugar free maple syrup to them too.
